MANZANILLA AND BODEGAS (CELLARS)


Sanlucar is the home of refreshing, sea-scented Manzanilla Sherry. The town`s humid, maritime air creates an ideal environment for the development of flor yeasts – the secret behind Manzanilla`s distinctive taste and aroma.

Sanlucar`s particular location was critical in the development of the Manzanilla style of Sherry for two reasons. The first is the moist seaside air here, which both encourages prolific flor growth and imparts a gently saline note to the wines. Proximity to the Atlantic means that both summer and winter are less harsh here than in Jerez de la Frontera, so the heat-sensitive flor can survive all year round. This both increases the yeasty, fresh-bread character of the wine and imparts distinctive notes of almonds and chamomile (manzanilla in Spanish). The flor also continuously protects the wine from oxygen, preventing it from developing into an oxidative Amontillado or Oloroso style. If the wine is left to age for so long that the flor does eventually die, the resulting wine is known as Manzanilla Olorosa and then a Manzanilla Pasada.

Another important festival for the town is the Feria de la Manzanilla in early June which leads up to the Noches de Bajo de Guía flamenco season, classical and jazz festivals and the occasional top rate concert.

The town`s ruined castle is currently closed for restoration works and stands amidst the buildings of the Barbadillo sherry company. It occupies a total area of over 75,000 m2 and has capacity for 35 million liters, making it the largest in the area. It was established in 1821 with the first steps in the art of making wine taking place in the Bodega del Toro, a beautiful example of Andalucian architecture. This is the town`s largest sherry firm and there are weekly tours every Thursday, taking place at noon. The bodega produces four varieties of sherry - a fino, olorosa, pasada and solear muy vieja, plus an excellent table wine.

The most charming bodega in Sanlucar, with mould growing on the walls and floor of the warehouse. It offers a chance to see the magic veil of yeast (the flor) protecting the wine in a specially cut display barrel.
